Gluten is a special type of protein found in wheat, rye, & barley. It has a sticky, gluey texture that helps give wheat products the ability to bake properly.

Casein is a protein found in milk & dairy products.

Why Do People Need a GFCF Diet?

Basically, the gut cannot properly break down theses proteins. They then leak into the bloodstream and form toxins. These toxins settle in the brain and drug the person. This leads to the person craving such foods as an addict craves their drug. Many times these people are in physical pain. People with autism are more susceptible to allergies and food sensitivities than the average person; and this is likely due to their impaired immune system.

Dyes, Preservatives, & Other Problematic Foods

Many kids are often sensitive to dyes & preservatives as well – best to avoid. Additives that should be eliminated are: synthetic dyes, artificial flavors, synthetic sweeteners such as asparatame, and three preservatives BHA, BHT, and TBHQ

Watch out for:

  • Preservatives BHA (E320), BHT (E321)- not metabolized easily in the body, can cause allergic reactions, hyperactivity, rashes, asthma, cancer, reduced body weight and increased blood cholesterol levels. (found in butter, meats, cereals, snack foods, ice cream, & vegetable oil)
  • Dyes: Red No. 3- banned in cosmetics and externally applied drugs, but still used in foods and oral medications. Can cause thyroid tumors, migraines, rashes, swollen skin, stomach upsets, water retention, asthma difficulties, & other allergic reactions. (found in maraschino cherries, bubble gum, baked goods, snack foods & candy)
  • HFCS - (High Fructose Corn Syrup) Now being called Corn Syrup: This goes directly to the liver, releasing enzymes that inform the body to store the substance as fat.
